Indonesian: Nasi Goring (fried rice)

(serves 4)

For the rice:
- 1½ cups rice
 - 3 cups water
 - 1 teaspoon salt
 
For the stir fry:
- Krupuk udang (shrimp/prawn crackers) (optional)
 - 6 tablespoons butter, divided
 - 6 eggs
 - 2 tablespoons olive oil
 - 4 shallots, finely diced (approx ½ cup)
 - 4 cloves garlic, minced
 - 1 teaspoon shrimp paste 
 - 1 tablespoon sambal olek (chili paste)
 - 3 tablespoons kecap manis (sweet soy sauce)
 
Procedure:
- Combine rice, water and salt; cook in rice cooker per manufacturer’s instructions 
 - Fry shrimp crackers: preheat oil, fry 5-10 pieces at a time for 3-5 seconds (crackers will expand); remove crackers from oil, drain on paper towels; set aside
 - Make scrambled eggs: melt butter in wok, then add 2 eggs stirring occasionally until scrambled; remove scrambled eggs, set aside 
 - Make sunny-side up eggs: melt butter in wok, then add one egg and fry until bottom becomes gently crisp but the yolk is still runny; remove egg and set aside; repeat with other 3 eggs
 - Bring wok temperature back up, add olive oil
 - Add the shallots and saute until soft (about 2 minutes)
 - Add garlic, saute briefly (about 1 minute)
 - Add shrimp paste, sambal olek, kecap manis; mix well
 - Add the cooked rice, mix well
 - Add the scrambled eggs, mix well
 - To serve: divide among 4 bowls, top each serving with 1 fried egg and garnish with shrimp crackers (if desired)
