Indonesian: Nasi Goring (fried rice)

For the rice:

For the stir fry:

Procedure:

  1. Combine rice, water and salt; cook in rice cooker per manufacturer’s instructions
  2. Fry shrimp crackers: preheat oil, fry 5-10 pieces at a time for 3-5 seconds (crackers will expand); remove crackers from oil, drain on paper towels; set aside
  3. Make scrambled eggs: melt butter in wok, then add 2 eggs stirring occasionally until scrambled; remove scrambled eggs, set aside
  4. Make sunny-side up eggs: melt butter in wok, then add one egg and fry until bottom becomes gently crisp but the yolk is still runny; remove egg and set aside; repeat with other 3 eggs
  5. Bring wok temperature back up, add olive oil
  6. Add the shallots and saute until soft (about 2 minutes)
  7. Add garlic, saute briefly (about 1 minute)
  8. Add shrimp paste, sambal olek, kecap manis; mix well
  9. Add the rice, mix well
  10. Add the scrambled eggs, mix well
  11. To serve: divide among 4 bowls, top each serving with 1 fried egg and garnish with shrimp crackers (if desired)
